This recipe offers a creamy and flavourful pumpkin chai latte with the richness of coconut milk and the warm, spiced notes of chai and pumpkin—perfect to keep on repeat after Labour Day, any time you crave something comforting! When it is still hot out, you can serve this cold over ice for a last blast of summer.
Ingredients:
1 cup coconut milk (unsweetened)
1 cup water
2 teaspoons loose leaf chai tea
2 tablespoons pumpkin puree (preferably homemade or canned)
1-2 tbsp coconut sugar or 1/2 tsp monk fruit (adjust to taste)
1/2 teaspoon vanilla extract
Pumpkin spice:
1/4 teaspoon ground cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground nutmeg
pinch ground cloves
Cinnamon stick or ground cinnamon for garnish
Directions:
1. Bring a cup of water to a boil. Add the loose leaf chai tea and let it steep for 5 minutes. Strain the tea after steeping.
2. Warm up the coconut milk and add it to a blender with the pumpkin puree, sweetener of choice, vanilla extract, cinnamon, ginger, nutmeg and cloves.
3. Pour the Pumpkin Chai Latte into your favourite mug. Garnish with a cinnamon stick or a sprinkle of ground cinnamon on top.
4. Serve immediately and enjoy this warm, cozy drink!
